AluSteel – Aluminium coated mild steel.
The thin layer of aluminium on the pan creates a barrier between the raw dough and the mild steel, which prevents a reaction that can look like mould on the dough. 90% of industrial and craft bakeries use AluSteel which has replaced Tin Plate.
More robust than aluminium especially when baking at very high temperatures. Suitable for deck and conveyor ovens with both fresh dough and par-baked pizza bases. The aluminium coating assists the seasoning process and offers a degree of protection against rust. The pans will blacken with use.
